Most years, April is my absolute favorite month. Sporting two family birthdays, Easter, and Spring Break, April is usually chock full of family celebrations.
This year is a little different with the kids on an extended school break and no travel plans on the horizon. Yet, I’m determined to still celebrate, albeit close to home. There is lots to love about the month of April for me. Birthdays are still special and Easter is still a holiday.
Make the most of this week and welcome April with punchy sauces and easy-breezy prep times. These meals are all tasty, celebratory, and totally doable. Staying home and keeping things small doesn’t mean it can’t be a party—even if it’s a party of one.

Lasagna is a great make-ahead meal, and this vegetarian version is no exception. Reheat leftovers for lunches all week long. Feel free to substitute canned pesto for the homemade version in this recipe. If a whole pan is too much, try our Cooking for Two: Loaf Pan Lasagna.

Pork chops are an easy weeknight meal but can be tricky to cook perfectly. I want a juicy pork chop that is just a little pink on the inside with a crispy crust on the outside. This recipe did the trick! The mustard sauce adds a nice tangy component, and, best of all, the meal is made in one pot and is on the table in less than an hour. Serve with Smashed New Potatoes with Garlic and Chives.
This is a great recipe to have in your back pocket. No fancy sauces or marinating time needed (though a squeeze of sriracha is never a bad idea). Just a few ingredients and a jaw-dropping 10-minute cook time make this meal one that can be made again and again. Serve with white or brown rice.
This simple recipe is one-pot, delicious, and incredibly fast. The light-flavored salmon fillet gets embellished with strong flavors for a satisfying meal. Simmering the salmon in with the sauce keeps the fish from drying out and makes clean up a snap. Fresh or frozen salmon or cod would work great in this recipe. Serve with Asparagus Risotto and receive high fives all around the dinner table.
